Breakfast

Overnight Oats with Fruit

1/2 cup old fashioned rolled oats

1/2 cup raw almond milk or coconut milk

1 tablespoon chia seeds 

1/4 teaspoon cinnamon

1/4 teaspoon vanilla extract

1/2 cup fruit

Put all ingredients except fruit in a mason jar with a lid and mix to combine.  Put the lid on and place in refrigerator overnight.  In the morning add fruit and any other optional toppings and more almond or coconut milk if desired.

Lunch

Lettuce Wraps with Guacamole, Taco Meat  & Red Pepper Dressing

Guacamole:

1 ripe avocado

¼ cup cilantro chopped

1/2  tomato chopped

1 clove garlic minced

juice of ½ lemon 

½ teaspoon pink Himalayan salt

Mash avocado in a bowl and add other ingredients and mix.

Taco Meat:

2 cups walnuts

2/3 cup sun-dried tomatoes in oil or dried & soaked in water 2 hours

3 tablespoons olive oil

1 teaspoon chipotle chili powder (or to taste)

1 teaspoon Himalayan pink salt

Put all ingredients in a food processor and pulse until blended but still coarse.

Red Pepper Dressing:

1 red bell pepper

1 clove garlic

1/2 tablespoon ginger

1/2 cup olive oil

1 tablespoon apple cider vinegar

1/4 teaspoon sea salt

Blend all ingredients in blender until smooth.  

Lettuce Wraps:

One head romaine lettuce

Lay romaine lettuce leafs on a plate and spread a layer of guacamole & taco meat on them and layer with grated or julienned carrots, celery, zucchini, jicama, cucumber, etc.  Top with alfalfa or sunflower sprouts.  Drizzle on red pepper dressing.

Mango Ginger Soup with Cashew Cilantro Cream

2 - 3 large mangoes or 2 - 3 c. frozen mangoes

1 small red onion

1 c. filtered water

juice of 2 limes

1/2 inch piece ginger root

Cashew Cilantro Cream:

3/4 cup cashews soaked overnight or 1 hour in boiling water

1/4 cup filtered water

juice of 1/2 a lime

1/4 cup parsley

1/4 cup cilantro

1 tsp Bragg's apple cider vinegar

1/4 tsp Himalayan pink salt

Put all ingredients for cashew cream into blender and blend on high until smooth & creamy.  Remove from blender and rinse blender out.

For Soup:

Put all soup ingredients into blender and blend on high until silky smooth.  Add more water if needed.  Pour into bowls and add a heaping spoonful of Cashew Cilantro Cream on top.
