Almond Vanilla Chia Seed Pudding
2 cup raw almond milk
5 tablespoons chia seeds
5 dates pitted & chopped
1 teaspoon vanilla extract
1/4 cup almonds chopped
stevia to taste
1 cup fresh fruit
Put all ingredients except fruit into a blender and pulse a few times to blend. Pour into 1 pint mason jars and refrigerate. Mix well 1 hour later to combine chia seeds. Mix again before eating to incorporate chia seeds if needed, and top with fruit.

Lunch

Buddha Bowl with Guacamole & Orange Tahini Dressing
Guacamole:
1 avocado
1 ripe tomato diced
juice of 1 lemon
1 clove garlic chopped
1 tablespoon salsa
1 small handful parsley or cilantro chopped
1/2 teaspoon Himalayan salt
Mash avocado in a bowl, add other ingredients and mix.
Dressing:
1/2 cup orange juice
1/2 cup raw tahini
1 clove garlic
1 teaspoon fresh grated ginger root
3 tablespoons coconut aminos
2 tablespoons Bragg's apple cider vinegar
2 tablespoons honey
Put all dressing ingredients in blender and blend until smooth
Buddha Bowl:
Chop, grate and dice as much lettuce, spinach and as many salad ingredients of your choice and throw into a big bowl. Top with sunflower seeds and hemp seeds and mix. Add a large scoop of guacamole on top and drizzle on orange tahini dressing.

Dinner

Gazpacho
6 ripe tomatoes diced
1 cucumber diced
1 green pepper diced
1 red pepper diced
1/2 small red onion diced
1 clove garlic
1 avocado pitted
1/2 cup cilantro chopped
1/4 cup olive oil
2 tablespoons balsamic vinegar
juice of 1/2 a lime
1 teaspoon Himalayan pink salt
1/2 teaspoon cracked black pepper
1/2 teaspoon ground cumin
Put all ingredients in a blender and blend to desired consistency. Serve with some chopped green pepper, cucumber and avocado and a drizzle of olive oil as a garnish.
